The wine cellar
The wine cellar is our company's heat beat. This is the place in which grapes, that have just been picked up, are carefully checked and reselected.
Modern equipment and innovative technology are used in order to make the most out of that nature has delivered.
During each annual production our company does not follow standardized operations. Each process is not carried out in rigorous sequence but through unique interpretations which are aimed at revealing and exalting what nature has created in the vineyard.
Just before being bottled, wines are left to rest in the wine house for a period of time that can range from a few months for wines that are ready to be consumed, up to year or more for that need patient refining.
These different combinations allow to obtain wines with intact fragrances and notes from their grapes of origin, together with the "bouquet" complexity that has formed thanks to the time resting in wood barrels.
